Concept Explanation: In the fifties and sixties Peter Canlis brought the world to Seattle on a platter. Exotic food from foreign nations was ahead of the curve, and Peter even snuck Hawaiian fish onto returning PanAm flights to impress the locals. And he’d return back from Seattle with suitcases full of Copper River Salmon and Dungeness crab. Peter capitalized on his relationship with the airline, whose executives all knew him from frequent flights. “They’d never seen mahi-mahi,” Mark said. “He would put an ice-filled suitcase between the jump seats on the plane and bribe the pilots and stewardesses with $20 bills.”
